Orange Bread

INGREDIENTS

Rind of one Hale orange
1 cup
Hale orange juice
1 egg
3 tablespoons salad oil
¾ cup sugar plus 2 tablespoons
½ cup finely chopped nuts
2 cups unsifted flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

PREPARATION

Squeeze juice from orange; add more to make 1 cup.  Cut up rind and put with juice in blender.  Blend at high speed until rind is finely chopped.  Add egg and oil; blend at high speed.  Mix flour and remaining ingredients (except nuts) in bowl; add orange mixture from blender, and mix until dry ingredients are moistened.  Add chopped nuts.  Turn into greased bread pan.  Bake at 350 degrees for about 45 minutes.

Serving suggestions:  Delicious when served warm from the oven with butter, or made into sandwiches, thinly sliced with cream cheese.
