Mango Bread

INGREDIENTS

¾ cup oil
2 eggs
1 ¼ cups sugar
2 cups flour
1 tsp baking powder
Juice of 1 lemon or 2 teaspoons
lemon juice
Nuts – coconut if desired
2 teaspoon baking soda
½ teaspoon salt
2 teaspoon cinnamon
1 cup raisins
2 cups mango – diced fine

PREPARATION

Mix well and let stand 20 minutes in baking pans before cooking. Bake 1 hour at 350 degrees. When done place pan on wet towel for at least 10 minutes, insert knife all around pan and lift with spatula before inverting rack. Cool for 1 hour before wrapping. Bread will be very moist.
